The winery is next to a pond and a
thousand-year-old wine cellar. It is able to process 180,000
kilograms of grapes, although currently to ensure that the level
of quality is maintained only 100,000 kilograms are used. These
grapes come from the 14 hectares of vineyard of the farms "La
Corva", "La Arroyada" and "Carralaorra". These farms basically
grow the 'tinta fina' variety of grape, and to a lesser degree
Cabernet Sauvignon, Merlot and Malbec. The soil is calcareous
clay, with a density of planting in some places of 3,000 stocks
per hectare, to ensure that each stock has a only few high
quality bunches of grapes.
Grapes from another 10 hectares of
controlled vineyard are also used, many of wich are more than 50
yeards old.
Production takes place at a
controlled temperature in 10,000 litre stainless steel tanks.
The wine is aged in the 240 oak
barrels wich are currently used in the winery (130 are of French
oak and 110 of American oak).
